As a first project, I wanted to make Banana Muffins. I found two recipes posted on allrecipes.com, the Lighter Banana Muffins and Banana Chip Muffins II.
My version is, I used 2 eggs, 4 medium size bananas (mashed) instead of 3, 2 cups all-purpose flour (not properly measured, but approximately 2 cups already), ½ teaspoon salt, ¼ cup white sugar, ½ teaspoon cinnamon powder, 1 ¼ baking powder. The combination of the two recipes (hahaha feeling expert na nag mix and match na n g recipes).
Following the directions of the Banana Chip Muffins recipe, but baked at 20 minutes, the muffins did turn out very beautiful.
The problem was the outer parts were, not crunchy but rubbery. Was it the time, or the mixture itself?
Though it was a little rubbery, but still the 9 pieces muffins were all consumed. Wala naman na sayang! Hihihi
